David 's passion for both cooking as a home chef and an instructor of Martial Arts has lead him to a fascination of both knives and swords. His dedication to the Martial Arts taught him to strive for perfection , through over 20 years of training in the disciplines of Kung Fu and Tai Chi.
David has spent years sharpening his own knives and has done a lot of research in best practice and methods of attaining a razor sharp blade. It is important to him that the process does not remove a lot of the blade, in doing so.
Most of the sharpening process is done by hand, which provides the razor sharp mirror edge that holds the edge longer without reducing the life span of the knife.
He has enjoyed the meditative process of sharpening so much that he decided to share his expertise with others and thus, created "The Cutting-Edge"
David has also begun the process of making his own knives
David realized that most people, whether they are chefs working in restaurants, or home cooks, did not have the time or expertise to sharpen their knives to a sharpness that both makes cooking safer and more enjoyable.
He decided to create a service that includes picking up and dropping off knives directly from and to the customer.
